Chef Paul Prudhomme: Louisiana Legend

The half-hour special celebrates the life of the restaurateur, author, entrepreneur and television personality Paul Prudhomme (1940-2015).

Before the age of celebrity chefs, a self-trained son of a sharecropper from the small city of Opelousas in Louisiana revolutionized American gastronomy. Chef Paul Prudhomme, whose specialties were Creole and Cajun cuisines, took the food he grew up with and shared it with the world, putting Louisiana regional cuisine on the map.

The program features interviews with longtime colleagues, including chefs Paul Miller and Frank Brigtsen, and Ella Brennan and Ti Martin of the James Beard Award-winning Commander’s Palace – the restaurant where chef Paul first fused Cajun country and Creole sophistication as executive chef in the late 1970s.
